Joe Otway shares four recipes for early autumn British produce
Chef Joe Otway published new recipes today that feature sweetcorn, squash, and radicchio as seasonal ingredients.

Pastry preparation requires chilling time
The first step involves rubbing butter into flour until the mixture resembles coarse breadcrumbs. Cooks must add grated cheddar and knead the dough gently before dividing it into four portions. These portions need to be wrapped and chilled for at least 30 minutes before baking.
Custard filling uses specific ratios
The custard blend combines whole eggs, milk, remaining cheddar, and English mustard until the mixture becomes smooth. Double cream is stirred in by hand to complete the liquid base for the tarts. The final seasoning step adds sea salt and black pepper to taste.
Oven settings vary by model
Heating the oven to 180C or 350F is required before greasing individual tart tins. The instructions specify using gas mark 4 for standard ovens during the cooking process. Each batch yields four individual tarts that take one hour to cook.
